Chicken with Prune and Olive sauce

4.5 stars

Finished Chicken, Olives. and Plunes

I don’t remember where I got this recipe from, but whenever I got stuck with dinner idea and stock in the fridge,  I always come to this recipe. It requires only 6 ingredients you might always have in your pantry. Chicken with Prune and Olive sauce is the one of my simple and healthy Chicken recipes….and delicious! Sweetness of prune and saltiness of olive harmonize together perfectly. So here is how you make;

Ingredieants for Chicken dish
These + Chicken

3/4 Cup        Chicken broth

1 1/2 lbs.       Chicken breast tenders (I used Chicken thigh)

1                    Small Onion

1/4 Cup         Chopped prunes

1/4 Cup         Chopped pimiento stuffed olives

1tsp                 Capers, drained and chopped

Defrpstoting chicken

  1. I had to thaw my frozen chicken. The best way for me, to thaw is to place the chicken in the bowl of hot water. This way, it is quick & no chance of cooking like it happens in the microwave.

Banging Chicken to be flat

  1. Pound chicken to even thickness for even cooking. ( I found this is a great way to de-stress myself. Whenever I am stressed out, I make this dish or Chicken Piccata)

browning Chicken

  1. In the skillet, heat oil on medium high and cook chicken until they are no longer pink throughout by turning once. (About 5 minutes) Transfer the chicken to the plate and keep warm.

Sauteeing Oniton

  1. Add onion to skillet and cook until they become soft. Add olives, prunes, capers, broth and JUICES from chicken on plate. Bring them to boil and cook 1 minute. Pour over the chicken and serve! (I served over brown rice and steamed broccoli)

Finished Chicken, Olives. and Plunes

It is Quick, Easy, Healthy, and Tasty. My kind of meal!!
